French Fry and Spam Casserole

2 lb Frozen French-fried potatoes; thawed
2 c Shredded cheddar cheese
2 c Sour cream
1 cn Cream of mushroom soup (10 3/4 oz)
1 cn Spam luncheon meat - (12 oz); cubed
1/2 c Chopped bell peppers
1/2 c Chopped onions
1 c White bread crumbs

Preheat oven to 350 degrees. Prepare a 9- by 13-inch pan with cooking spray; set aside.

In a mixing bowl, combine potatoes, cheese, sour cream, soup, luncheon meat, bell peppers, and onions. Mix well. Spoon into prepared pan. Sprinkle with crumbs. Bake for 40 minutes, or until heated through.

This recipe yields 8 servings.
