Mandamin (Corn -- Sioux Style)
1 1/2 c Corn
1/4 c Green bell pepper, diced
1/4 c Mild red pepper, diced
3 tb Oil
3 Shallots, chopped
Salt & pepper
Heat the oil & fry the peppers with the shallots for 3 minutes or so. Add the corn, salt & pepper. Cook for a further 5 to 10 minutes at low heat & serve.
