Homemade "cream Of" Soup Mix
2 c. nonfat dry milk powder
3/4 c. cornstarch
1/4 c. chicken bouillon granules
2 tbsp. onion flakes
1 tsp. basil
1 tsp. thyme
1/2 tsp. pepper
Combine all ingredients, mixing well. Store in an airtight container until ready to use. To substitute for 1 can of condensed cream of soup: Combine 1/3 cup of dry mix with 1 1/4 cup of cold water in a saucepan. Cook and stir until heated and thickened. Can be cooked in microwave. Add to casserole as you would canned product. For cream of mushroom, celery or potato, add appropriate vegetables. Yield: equivalent of 9 cans of soup.
