Light Olive Oil and Vinegar Dressing

1/4 cup cider vinegar
1/4 cup water
2 tablespoons olive oil
2 tablespoons olive brine
or juice from container of olives/capers
garlic salt
or garlic and salt -- to taste
pepper -- to taste


Combine the ingredients in covered jar and shake well before serving. Makes 3/4 cup. 20 cals per tablespoon.

VARY the oil and form of salt.
