Garlic Cheese Biscuits

2 c. biscuit mix
3/4 c. Colby cheese, grated
1/2 tsp. granulated garlic
2 tbsp. finely crushed parsley
Enough buttermilk to make dough the consistency of biscuit dough

Mix all ingredients together, adding grated cheese last. Dump onto well floured board. Sprinkle generously with flour and pat out to about 1 1/2 inches thick, cut with 2 inch biscuit cutter. Dip cutter into flour after cutting each biscuit to avoid sticking. Place biscuits on well buttered baking sheet, allowing 1 inch between each biscuit. Brush lightly with butter. Bake at 425 degrees until lightly browned. Remove from oven and brush with butter, again. Serve immediately. Makes about 1 dozen biscuits.
