Basic Marinade For Grilled Meats and Fish Saltsa Marinata
2 cups wine
1 cup olive oil
2 cloves garlic -- crushed
1 tablespoon minced fresh oregano
2 bay leaves
2 lemons -- juice of
1/4 cup fresh parsley -- chopped.
Match the wine in this marinade to the meat: red wine for red meats and game and white wine for fish and poultry.
Marinate fish 1 to 2 hrs.
Marinate poultry and meant as long as overnight, depending upon the desired intensity of flavor. Be sure to cover and refrigerate mixture if marinating longer than 1 hour.
Before grilling, bring meats or fish to room temp. Baste with marinade as they cook.
