Basic Crepes

3 eggs
1/4 tsp. salt
2 c. flour
2 c. milk
1/4 c. melted butter


In a blender, add eggs, salt, flour and milk alternately. Blend in melted butter and blend on high for 1 minute. Scrape down sides and blend 1 more minute. Pour into a bowl or shallow dish, cover and refrigerate for 2 hours to allow air bubbles to rise. Prepare using a crepe pan or no-stick skillet.
