Baked Apple Pancakes

2 red apples
1 tsp. lemon juice
2 tbsp. brown sugar
1/2 tsp. cinnamon
3 eggs
1/2 c. plus 2 tbsp. flour
1/2 c. plus 2 tbsp. milk
1/2 c. sugar

Cut pared apples into slices and toss with the lemon juice, brown sugar and cinnamon. Set aside. Combine eggs, flour, white sugar and milk. Beat slightly (butter will be a little lumpy). Butter two 9 inch pie plates. Add batter and top with apples. Bake at 425 degrees for 20-25 minutes or until puffed and golden brown. Serve immediately with maple syrup. May also be baked in a 12 inch cast iron skillet. Melt butter in skillet before adding mixture.
