1 1/4 C flour
2 Tsps baking powder
1 Tsp cinnamon
1/2 Tsp nutmeg
1/2 Tsp ginger
1/4 Tsp cloves
1 C apple -- shredded
1 1/3 C skim milk -- at room temperature
1/4 C egg white -- whipped
1/2 C applesauce -- at room temperature
1/2 C sugar
Prepare skillet with cooking spray and heat on medium until hot. In a
mixing bowl, combine flour, baking powder, cinnamon, nutmeg, ginger, and
cloves. In another mixing bowl, combine apple, milk, egg white,
applesauce, and sugar. Mix dry ingredients with wet ingredients just until
moistened. Ladle in the batter, using 2 or more tablespoons per cake.
Cook for 2 minutes, then flip carefully and cook for 2 minutes more.
