1 1/3 c flour -- sifted
1/3 c cornmeal
1 tbsp baking powder
1 tsp ginger
1/2 tsp baking soda
2 c nonfat yogurt
3/4 c egg whites -- whipped
1/4 c honey
2 tbsps applesauce
1 lg apple -- shredded
Prepare a skillet with cooking spray. Meanwhile, in a blender, blend flour,
cornmeal, baking powder, ginger, baking soda, yogurt, egg white, honey, and
applesauce until smooth. Stir apples into the batter. Heat skillet on medium
until hot. Ladle in the batter, using 2 to 3 tablespoons for each pancake. Sizzle
until lightly browned and cooked through, about 2 minutes each side.
