Apple Pancake

1 lg. apple
1 tsp. lemon juice
2 tbsp. sugar
3 eggs
1/2 c. plus 2 tbsp. flour
1/2 c. plus 2 tbsp. milk
5 tbsp. margarine (or butter)


Preheat oven to 425 degrees. Peel apple and cut into small chunks. Toss with sugar and lemon juice. Beat flour, milk and eggs lightly with egg beater to whisk. (Batter will be slightly lumpy.) Add apples. Heat margarine in a 2 quart casserole dish on the stove. When melted, remove from heat and add batter. Bake in oven for 25 minutes or until puffy and golden. Sprinkle with powdered sugar or serve with jam.
