Apricot Dressing

1 cup water
1/3 cup dried apricots
1/2 cup fresh lime juice
3 tablespoons Champagne wine vinegar or other light vinegar
1/2 serrano pepper -- minced
1 teaspoon fresh ginger -- minced
2 tablespoons honey
1/2 teaspoon sea salt


Makes 1 1/2 cups. Serving size is 2 tbsp.

Heat the water to a simmer. Add the apricots. Let set for 15 minutes, or until soft. Drain and cool. In a blender, combine the apricots with all the remaining ingredients and blend until smooth. Store in an airtight container in the refrigerator for up to 1 week.
