1 Egg yolk
1 tb Fresh lemon juice
1 ts Dijon mustard
Salt to taste
Freshly ground pepper
2/3 c Extra-virgin olive oil
Place egg yolk, lemon juice, mustard and salt and pepper to taste in a food
processor fitted with the metal blade or in a blender; process briefly to
combine. With the motor running, add the oil in a thin, steady stream and
continue to blend until smooth and thickened. Makes about 2/3 cup.
