Barbecued Halloumi Cheese with Caper Dressing

8 oz Cyprus Halloumi cheese


For the dressing:
3 tb Extra virgin olive
1 tb White wine vinegar
1 ts Lemon zest
1 tb Fresh lemon juice
1 ts Crushed coriander seeds
1 tb Chopped fresh coriander leaves
1 Clove garlic, finely chopped
1 ts Grain mustard
1 tb Capers, drained
Salt and freshly ground
Black pepper


To garnish:
Few sprigs of coriander or flat parsley


Prepare dressing by whisking all the ingredients together in a small bowl.

Slice the Halloumi cheese into 4 slices, place under a hot grill and grill on both sides until golden brown.

Place Halloumi slices on warmed plates and pour dressing over the cheese.

Garnish with sprigs of coriander or flat parsley and serve with toasted pita bread.
