Autumn Fruit Chutney

2 lb Plums
2 lb Cooking apples *
2 lb Tomatoes
2 lb Onions
1 lb Sultanas
1/2 ts Mace
1/2 ts Cayenne or chili powder
1/2 ts Mixed spices
1 oz Salt
2 oz Root ginger
2 Garlic cloves
1 lb Demarara sugar(brown)
2 c Spiced vinegar


* peeled and cored

Chop all the fruit and vegetables. Add spices etc. Boil in the vinegar until tender. Add the sugar and continue cooking until thick. Pack into jars and seal.
