Applesauce Filled Pancakes
1/2 c All purpose flour
1/4 ts Baking powder
1 pn Salt
3 lg Eggs; separated
1/2 c Sugar
1/2 ts Vanilla extract
1/2 c Milk
1/4 c Butter or margarine
1 1/2 c Applesauce
Sift together flour, baking powder and salt. Beat egg whites until
stiff, gradually adding sugar. Beat egg yolks until thick and lemony;
beat in vanilla and milk. Gradually beat in the dry ingredients. When
smooth, fold in egg whites.
Melt butter in cast iron skillet, pour in pancake mixture and bake at
375 degrees F until golden brown and puffy, about 25 minutes.
Fill center with applesauce, sprinkle with powdered sugar. Cut into
squares or wedges.
