Apple Cinnamon Pancakes

1 1/4 c All-purpose flour
3/4 c APPLE & CINNAMON MALT-O-MEAL; uncooked
1 tb Sugar
1 tb Baking powder
1 ts Baking soda
1 ts Salt
1/2 ts Cinnamon
1 1/2 c Buttermilk or sour milk*
1/2 c Applesauce
2 Eggs; beaten
2 tb Vegetable oil

Heat griddle to 375 F. In large mixing bowl, combine flour, cereal, sugar, baking powder, baking soda, salt, and cinnamon; mix well. Add remaining ingredients, stir until moistened and batter is smooth.

For each pancake, pour 1/4 cup batter onto hot griddle. Bake about 1 minute; turn and continue baking about 1 minute more.

YIELD: 16 4-inch pancakes

* One and one-half tablespoons lemon juice or vinegar plus milk to equal 1 1/2 cups can be substituted for buttermilk.
