1/2 c Sugar
3 c Fresh blueberries
1 ts Grated lemon peel
1 ds Salt
3 tb Sugar
1/4 ts Ground cinnamon
1 tb Cornstarch
4 ts Lemon juice
1 ts Ground cinnamon
1 c Flour
1 1/2 ts Baking powder
1/4 ts Salt
1/3 c Milk
For topping: stir together flour, 3 Tbs sugar, baking powder, 1/4 tsp
ground cinnamon and 1/4 tsp salt. Combine 1 beaten egg and 1/3 cup milk,
stir into dry ingredient just until moistened.
Combine sugar and cornstarch in saucepan; add blueberries, lemon juice,
lemon peel, cinnamon and salt. Cook and stir over medium heat 4-6 minutes
or until thickened.
Place in 4 cup baking dish; spoon topping over fruit misture. Bake at 375
15 -20 minutes or until golden brown. Serve warm with ice cream. Makes 4 servings.
