Lemon-Tahini Dressing

2 c Tahini
1 1/2 c Water; cool
1 c Fresh lemon juice
3 Cloves garlic; (1 tbsp) minced)
3 tb Chopped fresh parsley
1 ts Ground cumin
1 pn Cayenne pepper
Salt; to taste

Pour the tahini into a large mixing bowl. Gradually whisk in the water and lemon juice until smooth and creamy.

Whisk in the rest of the ingredients and salt to taste. Add additional water,necessary, to achieve the consistency of heavy cream.
