No Cook Vanilla Buttercreams

7 1/2 c Dry fondant, divided
1/2 c Light corn syrup (scant)
1/3 c Water plus
1 tb Water
1/2 ts Invertase
1/2 ts Salt
1/2 ts Vanilla
1/2 c Butter
Dipping chocolate


In a mixing bowl, combine 3 3/4 cup dry fondant with remaining ingredients. Mix at slow speed to blend. Slowly add remaining dry fondant, mixing at slow speed until smooth. Form into 3/4-inch balls and dip. Makes about 50 centers.

For richer center, use 1 cup butter and refrigerate overnight before forming centers.
