Old Fashioned Aussie Damper
4 c Self-raisning flour
1 ts Salt
60 g Butter
1 1/2 c Buttermilk
1/2 c Water
Extra flour, to dust
Herb butter, to serve
Preheat oven to moderately hot 210c. Lightly grase a flat baking
tray. Place flour, salt and butter into a bowl. Rub butter through
flour until mixture resembles fine breadcrumbs.
Add the buttermilk and water, then mix to a dough. Knead into a
ball on a floured surface, then flatten to a circle about 20cm in
diameter. Mark a cross in the top and dust with flour. Bake for
40-45mins or until damper sounds hollow when tapped. Serve with herb
