Garbanzo-Bean Dip

20 oz Garbanzo beans; drained
3 tb Tahini; (sesame-seed paste)
1/4 c Lemon juice;
3 cl Garlic; crushed
Scallion; minced
x Dash of salt;
x Parsley sprigs

Combine all ingredients except parsley in a blender or food processor and blend into a thick paste. Pour into serving bowl and chill. Garnish with parsley and serve with whole-wheat crackers or raw fresh vegetables. MAKES 40 Tablespoons.
