Lemon Cream Dressing

1/2 t Grated lemon zest
Juice of 1 lemon
1/4 t Paprika
Salt and freshly ground white pepper to taste
Pinch superfine sugar
6 T Olive oil
3 T Heavy cream

In small bowl, combine lemon zest and juice with paprika, salt and pepper, and sugar. Gradually add olive oil, then cream in a thin stream, whisking constantly until blended. Cover and refrigerate until serving time. Whisk before serving. Serve as dressing for sweet tender greens such as Bibb, mache, and butter lettuce. (Use dressing within 24 hours.)
