Low Fat Caesar Dressing
1/2 c Buttermilk
1/2 c Nonfat plain yogurt
1/4 c Parmesan cheese; freshly grated, about 3/4-oz.
1/4 c Lemon juice; fresh
2 Shallots; chopped
3 cl Garlic; minced
3 Anchovy filets; drained, minced
2 ts Lemon peel; grated
1 ts Fresh oregano; chopped
ds Worcestershire sauce; (generous dash)
Combine all ingredients in blender and blend until creamy. Season to
taste with salt and pepper. (Can be prepared 3 days ahead. Cover and
refrigerate. Bring to room temp before using). Yield - 1.1/2 cups
