Apple Butter

100 g Unsalted butter; cut into pieces at room temperature
3 Granny smith apples; peeled
1 ts Cinnamon
4 tb Brown sugar




Peel and chop the apples and stew them gently with the butter, sugar and cinnamon until the fruit is reduced to a firm pulp. Allow to cool. Puree the mixture until very smooth and chill.
