Ancho Chile and Lime Mayonnaise

3 Egg Yolks
1 Lime ; Juice of
6 oz Vegetable Oil
1 pn Salt
1/2 Ancho Chile Reconstituted; Seeded and Chopped.




Whip egg yolks in food processor or blender. Add oil in a slow, steady stream until incorporated. Remove and place in mixing bowl. Whip in remaining ingredients. Serve with crab cakes, smoked fish or shrimp.
