Basic Barley

2 c Vegetable or chicken stock or water
1/4 ts Salt
1 c Pot or pearl barley


In saucepan, bring water and salt to boil over high heat; stir in barley. Reduce heat to low; cover and simmer for 40 minutes or until tender and liquid has evaporated. Makes about 3 cups, or 4 servings.
