Balm and Orange Dressing

2 tb Finely chopped lemon balm
2 Oranges; skinned and chopped very finely
1 sm Canned red pepper; chopped finely
4 tb Olive oil
1 tb White wine vinegar
4 tb Orange juice
Salt and pepper


Combine the balm, oranges and red pepper and mix well.

Mix the oil into the vinegar, stirring thoroughly so as to thicken the mixture, and season with salt and pepper.

Stir the orange juice in and add the dressing to the balm mixture.

Allow it to stand for a few hours before serving.
