Banana Ice Cream
3 large fully ripe bananas
1 tablespoon lemon juice
1/2 cup sugar
1 pint whipping cream
1 small package vanilla instant pudding
Break bananas up into large bowl and beat with mixer until pureed. Add lemon juice and sugar and beat until smooth. Add whipping cream and pudding mix and beat with mixer at medium speed until smooth and thickened, about 2 minutes. Pour into ice cube trays or mould and freeze, until quite firm around the outside, but still soft in the middle. Put into chilled bowl and beat again until smooth. Pour back into trays or mould and freeze until firm.
Serves 6 to 9.
