1 1/2 c Lowfat cottage cheese, drained
1 tb Apple juice concentrate
2 tb Apple cider vinegar
1 Egg white
2 tb Fresh lemon juice
1 ts No salt added Dijon Mustard
3/4 ts Onion powder
1 ts Low sodium soy sauce
Place all ingredients in a food procesor fitted with the metal blade.
Process 4-5 minutes until creamy and smooth. Pour into a glass
container, cover and refrigerate overnight. Makes 2 1/2 cups.
Variations: Season with curry powder, fresh minced garlic, grated
horseradish, crushed pineapple, chives or salsa.
