Apricot Ice Cream

8 oz dried apricots
5 ounces water
10 ounces nonfat yogurt -- unsweetened, low or fromage frais
5 ounces fromage frais -- if available.If not, use more yogurt
2 tablespoons lemon juice
4 ounces confectioner's sugar

Put apricots and water in a saucepan, bring to the boil and simmer for 20 minutes. Allow to cool, then puree the result in a blender or food processor, add the rest of the ingredients and mix thoroughly. Freeze, stirring regularly.
