2 sm Garlic cloves, peeled & minced
1 c Virgin olive oil
Combine the garlic and the oil in a 1/2-pint Mason jar, cover, and shake a
few times to mix. Chill the mixture for 1 hour in the refrigerator. Strain
the contents through a fine sieve into a 1-cup glass measuring cup. The oil
should be ready to use immediately. Rinse and dry the Mason jar and return
any oil not used immediately to the jar. Store in the refrigerator for up
to 1 week.
YIELD: 1 cup
