Fresh Red Curry Paste

6 Red jalapenos, stemmed, seeded, and coarsely chopped
4 Stalk lemongrass, trimmed and thinly sliced
1/4 c Coarsely chopped shallots
2 tb Cilantro leaves
1 tb Coarsely chopped garlic
1 tb Chopped fresh ginger
1 tb Thai fish or soy sauce
1 tb Peanut oil
2 ts Ground coriander
1 ts Fresh grated lime rind
1/2 ts Ground cumin
1 1/2 ts Salt
1/2 ts Black pepper

In food processor, combine all ingredients. Process until paste forms. Use on fish to be steamed, to infuse oil for stir-frys, or as sauce or salsa for grilled meats and fish.
