Easy A-b-c Soup
2 cups cubed cooked chicken -- or turkey
2 cups frozen mixed vegetables -- (from 16 oz. pkg)
1/2 cup chopped celery
1/4 cup chopped onion
1/2 teaspoon dried thyme leaves -- (1/4-1/2 tsp.)
1 bay leaf
6 cups fat-free chicken broth
1 cup alphabet macaroni
In a 4 quart saucepan or Dutch oven, combine all ingredients except macaroni. Bring to boil; reduce heat and stir in macaroni. Simmer 12 to 15 minutes until vegetables and macaroni are tender. Remove bay leaf. Season to taste with salt and pepper.
10 (1-1/4 cup) servings.
