Green Prawn Curry

2 tb Oil
1 tb Green curry paste
12 King prawns
1 Chicken breast
1 cn Coconut milk
1 Aubergine
4 Lime leaves
2 Stems of lemon grass
1 Lemon; juice of
2 Red peppers
1 Coriander to garnish

Fry the curry paste in the oil and add the coconut milk. Bring to the boil and take to a simmer. Add the chicken and vegetables and continue to simmer for 2 minutes.

Add the prawns and cook for a further 3 minutes. Stir through the lime juice. Serve garnished with the coriander.
