Curry-curry Couscous

1 c Couscous
3 Plum tomatoes
1 tb Indian-style curry paste
1/2 c Cashews
2 tb Cilantro, chopped
Fresh ground pepper

In a covered saucepan, bring 1 cup of water to a rolling boil over high heat. Add the couscous and 1/2 tsp salt, stir well and remove from the heat. Cover and let stand for at least 5 min.

Meanwhile, chop the tomatoes.

Fluff the cooked couscous with a fork. Add the tomatoes and curry paste and toss. Add the cashews, cilantro, and salt and pepper to taste; toss well and serve.
