Blue Cheese Dressing

6 tb Extra virgin olive oil
2 tb Sour cream; or yogurt
5 ts Sherry vinegar
OR aged red wine vinegar
3 oz Blue cheese*; crumbled
1 tb Snipped chives
Salt and freshly ground pepper


*Maytag is a good choice for the blue cheese

Whisk all the ingredients in a bowl except the salt and pepper. Taste and add salt if needed -- the cheese will be salty. Season with pepper.

Spoon over hearts of romaine or serve as a dip for crudites. Makes about 1/2 cup.
