Goan Creamy Curry

500 g Panir cheese; cubed
200 g Mushrooms
200 g Peas
100 g Spinach
50 ml Groundnut oil
2 ts Garam masala
2 ts Ground coriander
1 ts Ground cumin
100 ml Coconut milk
100 ml Double cream
1 ts Salt
2 Fresh red chillies
1 ts Turmeric
2 Cm root ginger; grated
2 Cloves garlic; crushed
100 ml Water


Shallow fry the panir. Add the salt, garam masala, coriander, cumin, turmeric, ginger, chillies and garlic and saute lightly.

Add the water and bring to the boil. Add the peas and mushrooms and simmer for 10 minutes. Add the spinach, coconut milk and cream and simmer for 5 minutes.

Serve with rice.
