Artichoke Bean Dip
15 oz Canned navy beans; drained, or pinto beans
14 oz Canned artichoke hearts; drained
7 oz Canned artichoke hearts; drained and minced
2 tb Lemon juice
2 Cloves garlic; pressed
2 Whole green onion; chopped, or minced yellow onion
Salt and pepper; to taste
Paprika; for garnish
Combine all ingredients EXCEPT the 7 oz of minced artichokes in a food
processor and blend until smooth. Stir in the minced artichoke pieces
for texture and enhanced flavor.
